Buckwheat is a gluten free ‘grain’ (technically a fruit seed, related to rhubarb!). It is a great source of manganese, magnesium and phosphorous.
We source the best, truly raw, certified organic buckwheat, which we long-soak in a saline solution of filtered water and Mountain Spring Salt. This activation process minimises or eliminates enzyme inhibitors, phytates (phytic acid), polyphenols (tannins), and goitrogens (all of which were added by Mother Nature to prevent the precious seeds being eaten and digested). After soaking, we dehydrate the buckwheat at a low heat until it’s crunchy again, but still remaining in its nutritious, raw state.
Buckwheat is a key ingredient in giving our Crack’l its ‘crack’ and is a lovely addition to fresh salads.
