We source the best, truly raw, certified organic walnuts, which we long-soak in a saline solution of filtered water and Mountain Spring Salt. This activation process minimises or eliminates enzyme inhibitors, phytates (phytic acid), polyphenols (tannins), and goitrogens (all of which were added by Mother Nature to prevent the precious seeds being eaten and digested). Our gentle drying process (at temperatures below 47ºC) ensures the nuts remain in their nutritious, raw state.
Our unflavoured Activated Walnuts allow you to fully appreciate the difference the activation process makes. Before activation, walnuts have a rather bitter aftertaste, which completely disappears after activation, leaving behind a really creamy nut!
